Curried Shrimp Stir Fry

A friend passed this recipe along to me. The combination of ingredients has been shown to reduce stress levels. Omega-3 fatty acids in shellfish may boost your mood by reducing stress hormones. Cortisol secretion found in curry also reduces stress levels. Milk helps anxiety and irritability. Red bell peppers release *oxytocin.

  • 2 tsp Curry Powder
  • 1 cloves Garlic Clove
  • 2 tsp Olive Oil
  • 1/4 cup Non-fat Milk
  • 3 oz shrimp
  • 1/2 cup Frozen Peas
  • 3/4 cup brown rice
  • 1 cup Bell Pepper, Red
  • 1 cup Carrots, grated
  • 2 tbsp Pistachios
  • 2 tbsp Organics Raisins

Makes one serving. Saute curry powder and garlic in oil for 1 minute. Add milk, shrimp, peas, rice, bell pepper, and carrots. Cook until veggies are tender. Top with pistachios and raisins.
